Fire up the Grill…Beer Can Chicken…Berkshire Style
With the holiday weekend quickly approaching grills will be fired up all over the Berkshires. Why not try something different this weekend…a tasty, juicy chicken cooked using not only beer, but the can.
The ingredients you will need…
For the Rub – mix together in a bowl and set aside
½ teaspoon of lemon zest
1 teaspoon of paprika
1 teaspoon of salt
½ teaspoon of ground pepper
1 teaspoon of dried rosemary chopped fine
1 teaspoon of dried thyme
For the Beer Can...
Red Pepper Flakes
Directions for Grilled Berkshire Beer Can Chicken
1- Take your whole chicken and remove the giblets and neck.
2- Rub the chicken with olive oil. Take your magic rub and cover the entire chicken with the mix both outside as well as inside the chicken’s cavity.
3- Open a can of beer and drink half. With the remaining 6 ounces, add minced garlic, rosemary, thyme, lemon juice and pepper flakes unto the can.
4- Works best if you poke a couple of additional holes in the top of the beer can.
5- Place the chicken on top of the can. Make sure the can supports the chicken in a standing position.
6- For best results, pre-heat the grill to a medium heat. Sit the beer-can stuffed chicken on top of the grill and cook over indirect medium heart for between 1 ½ to 2 hours until the chicken reached the temperature of 180 degrees.
7- Once cooked remove the chicken keeping the beer can in tact and let it sit for about 15 minutes.
8- Carve and eat the juiciest chicken you have ever had.
9- Enjoy the other 5 beers in the 6
